Pasta Salad 

A wonderful cool pasta salad perfect for summer cookouts. Makes approximately 15 servings.

1 Head Broccoli, blanched
1 Head Cauliflower
4 Oz Colby Jack Cheese, shreaded
2 Oz. Black Olives, sliced
8 Oz. Low-Carb Pasta (i.e. Dreamfields Rotini), cooked
¾ Cup Low-Carb Italian Dressing

Chop broccoli and cauliflower into small bite sized pieces. Mix with shreaded cheese, olives and cooked pasta. Toss with italian dressing. Chill until ready to serve.

If the day is not too hot try substituting 3/4 Cup Ranch dressing for the Italian and crumble in some cooked bacon and grape tomato halves. Yum!
