The softness of the tofu works well in this delicious soup. Vegetarian too!
|64 Oz||Vegetable Broth|
|14 Oz||Firm Tofu, cubed|
|1 Cup||Mixed Low-carb Veges (Cabage, Broccoli, Onion, Carrot, Mushroom etc.)||to taste||Salt and Pepper||
Put broth in a large pot and begin to heat over medium. Drain tofu and cut into cubes. Add tofu to broth. Add mixed veges. (I like to get my veges at the salad bar in my local grocery store. You can get small amounts different veges already presliced.) Cook for 10 minutes.
Add salt and pepper to taste.
Delicious Low carb and vegetarian. Try chicken stock if vegetarian isn't important to you.
Carbs: ~5 per serving. Serves 4.
